Capsacin – Feeling the REAL Burn |

Everyone is familiar with the burning feeling of the tongue, lips, and mouth from the consumptions of peppers of all varieties (belonging to the genus Capsicum). This is a sensation which people can all tolerate to varying degrees, but the consumption of capsacin has undeniable health benefits. There is evidence that capsacin was originally developed by plants as a fungal grown inhibitor, though it has had the dual benefit of being a deterrent of the consumption of peppers by mammals, whose digestive tract will sterilize the pepper seeds. There are MANY varieties of peppers, from the mildest Bell Peppers (Capiscum Annuum) to the worlds hottest peppers, the Bhut Jolokia (Capiscum Frutescens). All of these peppers produce capsacin to varying degrees. A good indicator of the level of capsacin the the heat level of the pepper. A bell pepper has a Scoville Rating of 0, which means it is not hot...at all. It has so little capsacin it is barely measurable. Your average jalapeño has a SR of about 10,000, and the worlds hottest pepper, has a rating of over 1,000,000 heat units. The Bhut Jolokia holds the Guinness Record for the hottest pepper. It originated from the Manpur region of India, where it is used as both a folk remedy for illness, and as an elephant repellent (forget keeping deer away...they keep ELEPHANTS from knocking over fences with this stuff). It is simply rubbed on the rails of the fences. When the elephant attempts to dismantle the fence, it is burnt by the oil of the peppers. Capsacin has been shown to have the following benefits: Capsaicin was shown, in laboratory settings, to cause cancer cell death in rats. Recent research in mice shows that chili (capsaicin in particular) may offer some hope of weight loss for people suffering from obesity. Researchers used capsacin from chilies to kill nerve cells in the pancreases of mice with Type 1 diabetes, thus allowing the insulin producing cells to start producing insulin again. Research in humans found that "after adding chili to the diet, the LDL, or bad cholesterol, actually resisted oxidation for a longer period of time, (delaying) the development of a major risk for cardiovascular disease". Researchers found that the amount of insulin required to lower blood sugar after a meal is reduced if the meal contains chili pepper. Chili peppers are being probed as a treatment for alleviating chronic pain. By combining an anesthetic with capsacin, researchers can block pain in rat paws without causing temporary paralysis. This anesthetic may one day allow patients to be conscious during surgery and may also lead to the development of more effective chronic pain treatments. I believe that a very important part of being conscious of the world around us, is growing of your own home garden. This relieves the burden of supply from our infrastructure, as well as gives us a closer connection to the earth in general. In this modern age we have forgotten to listen to the planet, and gardening is a great way to reconnect. In the spirit of that, come springtime, I will have seedling of many different pepper and tomato plants I can make available. Newly formed society meats for first time
The San Luis Obispo County Vegetarian Society holds its first meeting September 28, 2008 at 6 pm at the Fellowship Hall of the Templeton Hills Seventh-day Adventist Church, located at 930 Templeton Hills Rd in north SLO County. Meetings will be held on the last Sunday of each month at 6 pm. The society is the first of its type in SLO County, although vegetarian societies exist in many cities such as Santa Barbara, San Francisco, and Sacramento.
“Vegetarian is the new Prius,” says Stephen Mulder, M.D., SLO Vegetarian Society co-founder and former president of the SLO County Medical Society. “It is probably the most environmentally friendly choice a person can make. Vegetarian is also a path to optimal health. Have you noticed the way our society is parodied in such films as Wall-E or Super Size Me. It seems painfully accurate of the direction we’re headed. This new vegetarian society will be in a position to deal with these problems. I also think this society will be in an excellent position to help support those who grow our local fresh produce and businesses that are health related.”
Monthly meetings will consist of a vegetarian “potluck” meal. Members will share favorite meals and recipes in an informal setting, with monthly themes determining the type foods to be prepared. This society will offer the community a chance to enjoy a good meal, learn a new recipe, hear from leading environmental and nutritional experts, or just make new friends who share common values. This society reflects the growing realization by many that the safest food, the best protein, the optimal nutrition is found in plants.
The Templeton Hills Seventh-day Adventist Church is helping support this new society by providing kitchen facilities and a meeting hall. The Adventist church has a long history of promulgating a healthy vegetarian lifestyle. The society is open to all members of the community interested in improving their health, the environment, or those who share a love and compassion for animals. Top Ten Reasons SLO County NEEDS a Vegetarian Society.
- Vegetarian cuts down our dependence on foreign oil. Producing a calorie of meat protein means burning more than ten times as much fossil fuel as does a calorie of plant protein. The average American does more to reduce global warming emissions by going vegetarian than by switching to a Prius
- Vegetarian means more clean water . Animal agriculture accounts for most of the water consumed in this country. It is the world's largest source of water pollution, churning out 5 million tons a day of manure, more than a hundred times that of the human population.
- Vegetarian saves the rain forest. Seventy percent of former Amazon rainforest is used for pastureland, and feed crops.
- Vegetarian means nutrient dense foods! The FAO (Food and Agriculture Organization of the United Nations) has declared 2008 as the Year of the Potato! The humble potato plant produces more nutritious food, quicker, on less land, and in harsher climates than any other major crop.
- Vegetarian means fiber rich foods. Meat contains absolutely no fiber. Meat eaters have more constipation, hemorrhoids, indigestion, diverticulitis due to lack of fiber. Fiber also lowers blood cholesterol, regulates blood sugar in diabetics, and helps prevent certain cancers, especially of the colon.
- Vegetarian characterizes a person. Removing animal foods from the dinner plate often opens the door to a new sensitivity and compassion for animals. Many who turn to plant foods for health come to realize that the killing and suffering of animal foods is not justified.
- Vegetarian means no deadly bacteria. E. coli and other potentially dangerous bacteria are found in the colon of animals. Plants do not produce these infectious organisms, however the pollution from slaughterhouses and feedlots contaminate them.
- Vegetarian means less acid. Meat proteins are high in acid. The acid is neutralized by the calcium in our bones causing bone loss, osteoporosis and calcium containing kidney stones.
- Vegetarian means better breath and less body odor. Meat proteins contain more of the sulfur-containing amino acids. The sulfur is famous for that “rotten egg” aroma, and is part of the body odor and breath of the meat eater.
- Vegetarian means ALL the children go to bed with a full stomach. One acre of land could produce 250 pounds of beef, but is much protein is produced growing plants, because that acre could have grown 50,000 pounds of tomatoes, 40,000 pounds of potatoes, 30,000 pounds of carrots, or many other types of healthy foods.
